Tomorrow marks the first day of classes after Spring Break. Where did the time go? It feels like I just got on Spring Break… I am ready for a week of relaxation. My Spring Break was anything but relaxing. Like many college students I tend to over book my schedule. Why do we do this to ourselves? (My main reason second to being masochistic, is that it pads my resume and gets me that much closer to my future goals. At least that’s what I keep telling myself.) But now it is Sunday night and I am behind on my homework/studying, my inbox is in a state of chaos, and I have no restful eyes or beautiful Cancun tan to show for it.
So, what did I do…
I spent days compiling and organizing my research materials that have accumulated over these past 2.5 years of college. Although I did waste a lot of paper and printer ink in the process, I think it will be a very beneficial tool later in my career. I recommend that everyone do this while they are in college, even if you aren’t a Food and Nutrition major like I am. But what can I say, I am an organization freak! and I can’t help it. Organization soothes me.

I traveled home twice to see family and friends. Seeing as how my siblings and I have birthdays on March 23, April 3 & 5 (how did my parents manage that one?), I spent a lot of time celebrating. Very low key of course, because that’s how I am. I will be turning 21 this year. Honestly I am most excited that I can now rent a car from most places and that I can by alcohol to cook with. WooHoo!


I baked mini Gluten Free Red Velvet Cupcakes for a bake sale that raised money for female veterans. I thought that they turned out really tasty for being gluten-free, although I think that the wheat version would have been much tender and less crumby. I had to make my first purchase at Whole Foods, because it was the only place I knew of that would carry Coconut Flour. I am surprised I made it out without maxing my credit card. Whole Foods could become a dangerous place for me… there are just so many cool foods there!!

And lastly, I finished the Dr. Who series up to Season 6. It’s so good! I can’t wait till the next season comes out on Netflix! And that’s all I will say on that…
So needless to say, I am stuck with an application to finish, a pile of studying to do, an unclean bathroom, and an hour until Monday rolls around. Tomorrow I will be waking up with my annual hangover… The Spring Break Hangover!
P.S. I also did other things, such as volunteering and dancing ballet. Maybe I will include that on some other post.
I wonder how many people will read this version thinking that it is the real The Hunger Games book.
